Den fünf Choralbearbeitungen von "Esquisses Grégoriennes" liegt der jeweils im Titel genannte Cantus firmus zugrunde. Sie können wie folgt in den Messablauf integriert werden : "Nos autem" zum Einzug, "Ave maris stella" zum Gabenbereitung, "Pater noster" zum Hochgebet, "Ave verum" zur Kommunion und "Filii et Filiae" zum Auszug. "Alaiki'ssalaam" (Friede sei mit dir) ist eine maronitische marianische Melodie, die hier in einem Satz von 7 Variationen entwickelt wird. Von melismatischer Ausgestaltung über Variationen mit rhythmischen Ostinati, einen Marsch oder eine Habanera bis zum Abschluss in einer brillanten und fröhlichen Coda entwickelt Hakim wirkungsvoll das Thema.
