Soft matter materials include polymers, colloids, emulsions, amphiphiles, surfactants, membranes, liquid crystals and biomaterials. Although these materials seem very different, they have common structural and dynamic properties that are somewhere between those of crystalline solids and simple molecular liquids and gases.
